Organic certification guarantees that the grapes used to produce balsamic vinegar were grown without the use of synthetic pesticides, herbicides or fertilizers. This makes the vinegar healthier and more environmentally friendly than conventional balsamic vinegars.
Why “Santa Caterina”?
In 1420 a small village was founded around the convent of the Augustinian friars, a small convent to which a hospital for pilgrims and the infirm was soon added. Famous at the time, it hosted Martin Luther in 1511. From these roots was born a small vinegar factory producing Traditional Balsamic Vinegar of Modena PDO which still today bears the name of Santa Caterina.
